Oil and Sugar free crunchy granola

IMG_3840 Happy New Year! I hope 2016 is a great one for you all. In keeping with the ever popular New Years resolution of being healthier and losing a few Christmas/baby pounds in my case, I thought I would share this little gem of a recipe!

I love granola, I have it for breakfast with almond milk or on top of yogurt, its great with stewed fruit or for making granola bars and of course by the handful. That is the problem, whenever I make a batch of granola I can’t stop eating it, so I decided to experiment with healthier versions until I came up with the perfect one. I wanted it to be crunchy and stay in clusters but without all of the added sugar and oil because its shocking how quickly the calories add up.

The first thing I did was cut the sugar, the wonderful thing is that it really doesn’t take away from the taste, once you mix in all of the dried fruit, it is lovely and sweet plus sprinkling in spices like cinnamon and nutmeg really enhances the flavor. The trickier part was cutting the oil, simply removing the fat leaves you with soft, boring granola so I kept experimenting until I found the perfect substitute; egg whites. By switching the oil and sugar for egg whites you cut out 700 calories from the batch of granola which is huge plus egg whites not only make amazing, crunchy granola they also add very high quality source of protein.

Below are a couple of variations to try along with a basic ratio that can be used to make any flavor you like. If you aren’t ready to completely cut out the sugar or enjoy a certain flavor like maple you can go ahead and use a little, I find 1 tablespoon is enough to give you that maple flavor. Plus you are still cutting out a ton of calories without the oil and using much less sugar than regular granola recipes.

Spiced Almond and Cranberry Granola

  • 2 cups of GF rolled oats
  • 2 egg whites
  • 1 tsp of vanilla extract
  • 1 tsp of cinnamon
  • 1/4 tsp nutmeg
  • 3/4 raw almonds
  • 1/3 sunflower seeds
  • 1/2 cup of dried cranberries
  • 1/4 cup of chopped dates

Basic ratio:

Use the ratio below to create your own mix

  • 2 cups of GF rolled oats
  • 2 egg whites
  • 1 tsp of vanilla extract
  • 1 heaped tsp of cinnamon or other spices
  • 3/4 of nuts
  • 1/3 of seeds
  • 3/4 cup of dried fruit

Preheat your oven to 325 degrees, in a large bowl add your oats, spices, nuts and seeds. In a separate bowl whisk your egg whites lightly with the vanilla extract and pour over your oats, stir until they are equally covered.

Spread the mixture into a thin layer on a lined baking tray and bake for 15 minutes then gently turn over being careful not to break up the clusters. Bake for a further 10 minutes then remove from the oven. Once cooled add in your dried fruit and store in an air tight container such as a mason jar.
